Method

Step 1
Heat 1 tbsp olive oil in a saucepan. Add the onion (1) and cook for 3-4 minutes, until soft, before adding the pepper (1) and cooking for 3 more minutes. Add the garlic (2 cloves) and stir for a further minute.
Step 2
Pour in the chopped tomatoes (1 tin) , tomato juice (200 mL) and beans (1 tin) and stir in the chipotle paste (5 g) . Bring to the boil, then simmer for 10 minutes. Stir occasionally.
Step 3
Sprinkle over small chunks of the goat’s cheese (100 g) and leave to simmer for a further 5 minutes.
Step 4
Toast the hot cross buns (4) . Serve everything together on the table, using the hot cross buns as a scoop for the beans.
