truffle soft cheese

Method

Step 1
Heat a saucepan of salted water over a medium heat.
Step 2
Place a medium-sized frying pan on the hob over a medium heat and add the olive oil (as needed) and prepped asparagus (2 packs) . Gently pan fry until tender, then remove from the pan.
Step 3
Once the water is boiling, add the pasta (320 g) and cook for 8 minutes, until al dente.
Step 4
While the pasta is cooking, add the soft cheese (250 g) and 2 tbsp of the pasta cooking water to the frying pan used for the asparagus. Bring to a simmer over a medium heat for about 1 minute.
Step 5
Once the pasta has cooked, drain and add to the frying pan with the cream cheese sauce. Mix and season to taste with salt and pepper.
Step 6
Serve topped with rocket (40 g) and asparagus.
