Preheat oven to 160°C. Lightly grease a fluted loose bottomed tart tin of between 24-28cm in diameter.

Place the butter (130 g), sugar (125 g), honey (2 tbsp), orange zest (1 tbsp) and vanilla essence (1 tsp) in the bowl of an electric mixer and beat for 6-8 minutes, or until fluffy.
