Method

Step 1
Heat the vegetable oil (15 mL) in a large saucepan. Add the leek (1) and chestnut mushrooms (600 g) and fry for about 5 minutes, until the leek is tender.
Step 2
Stir in the garlic paste (35 g) , then pour in the vegetable stock (1 L) , bringing it to the boil.
Step 3
Add the Plant Kitchen super firm tofu (300 g) and broccoli (1 head) and heat through. Divide between serving bowls, add a drizzle of sesame oil (as needed) to each one and scatter with M&S spring onions (2) to serve.
