step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Add the chips (400 g) and peppers (3) to a large baking tray, then toss through 2 tbsp olive oil and the smoked paprika (1 tbsp). Roast for 30 minutes, or until the chips are golden and the peppers are tender.

After 25 minutes, add the cherry tomatoes (200 g) and olives (50 g) and return to the oven for 5 minutes.

Meanwhile, heat 1 tsp olive oil in a large frying pan over a medium-high heat. Fry the sausages (6) for 12 minutes, turning occasionally until golden brown.

Meanwhile, add the mayonnaise (75 g), garlic (1 clove), mustard (1 tsp), lemon juice (1 tsp) and salt (1/4 tsp) to a small bowl and mix well.

Serve the sausages and chips, with a big dollop of aioli on top.
