Beef Burgers, peppered gravy mayonnaise, garlic bread

Beef burgers in garlic bread inspired by the food Mark loved as a teenager. He shows us how to make juicy beef patties and serves them up in crispy garlic bread

Ingredients

  • 400g high-quality beef mince
  • 8g sea salt
  • Black pepper
  • 300ml leftover gravy
  • 1 egg yolk
  • 1 tbsp white wine vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp black pepper
  • 1 tbsp soy sauce
  • 300ml plain oil
  • 1 sourdough baguette
  • 1 head garlic
  • 150g softened butter
  • 10g grated parmesan
  • Handful parsley
  • Mixed green salad leaves

Method

  1. Preheat the oven to 150c.
  2. Start with the mayonnaise, add the gravy and soy sauce to a pot and reduce down to a concentrated syrup that is highly seasoned. Allow it to cool and then add it to a bowl with the egg yolks, pepper, vinegar and mustard. Whisk in the plain oil until a thick mayonnaise is formed, Adjust seasoning and store in fridge.
  3. For the garlic bread, place the garlic bulb in a small sheet of tinfoil, cover in olive oil and salt and cook in the oven at 150c for 1.5 hours until soft, increase oven to 200c. Remove and cut off the base, squeeze the golden brown pulp into a bowl. Add the butter to the bowl and mix, season with the parmesan and chopped parsley.
  4. Cut the bread roll sideways all the way along it, going just to the base. Fill the gaps with the seasoned butter before wrapping in tinfoil. Cook at 200c for 25mins until golden brown and soaked in the butter.
  5. For the burgers, place the meat in a bowl and season with the salt and pepper, mould lightly into burger patties using your hands, careful not to make meat paste.
  6. Cook the burgers in a non-stick pan over a medium heat until dark brown on both sides, you can finish them in the oven to cook through if you prefer
  7. Toast the burger buns. Place the base on the plate and top with the burger patty. Top with the gravy mayonnaise.
  8. Lightly dress the mixed leaves with olive oil and lemon juice to serve alongside.
  9. Remove the garlic bread and serve in the tinfoil to tear and share.
