For a special start to the big day, our Scottish Spey Bay signature smoked salmon, cured in gin and finished with citrus zest and dill, is just the ticket.

To whip up the eggs, whisk a healthy splash (around 100ml) of single cream or full-fat milk into two eggs until the mixture is one consistency. Add a sprinkle of salt and pepper to season.
Gently heat a small saucepan and add a large nob of butter. Once it's melted, pour in the eggs and allow the mixture to sit for 20-30 seconds. Then, gently fold the mixture from the bottom of the pan. Repeat until the eggs are softly set and still creamy, then remove from the heat and allow to finish cooking for 30 seconds.
Serve on buttered sourdough bread with slices of smoked salmon and a glass of our pre-mixed Bucks Fizz for a fabulous start to the day.
