Preheat the oven to 180°C/160°C fan/gas mark 4 and line 2 baking sheets with baking parchment.

In a food processor, pulse the flour (250 g), cardamom (8) and icing sugar (100 g) once or twice to combine. Tip in the butter (150 g) and pulse until the mixture looks like fine breadcrumbs.

Add the orange zest (1), egg yolk (1) and water (1 tsp), then pulse again until a dough forms.

On a lightly floured surface, gently press the dough into a flat disc. Wrap in clingfilm and chill for 20 minutes.

On a floured surface, roll out the dough to 3mm thick, then use a cutter to cut out around 24 biscuits. Lift onto the baking sheets and pop in the freezer for 10 minutes to firm up, then bake for 7-8 minutes, until golden.

Meanwhile, melt the white chocolate (100 g) in a heat-proof bowl over a saucepan of simmering water. When the biscuits are ready, decorate them in criss-cross patterns. Allow to cool.
