Blue cheese stuffed fried olives (serves 8)

Author's notes

If you don’t have an air fryer, you can fry them in a pan. Add two inches of vegetable oil to a heavy-bottomed saucepan. Once up to temperature, fry the olives in batches over medium heat for a minute or two until the crumb is golden. Transfer to a kitchen roll-lined plate with a slotted spoon.

Grab a cocktail shaker and fill with ice. Add your gin (50 ml), lemon juice (25 ml) and honey syrup (12.5 ml). Shake until well-chilled.

Double strain into a cocktail glass. Garnish with a twist of M&S Remarksable Value lemon (1) and a sprig of rosemary (1 sprig).

Pre-heat the air fryer to 180°C if required.

Thinly slice your apple (1) or (carefully!) use a mandolin. Layer apple slices in a single layer in the air fryer basket.

Cook for 8-10 minutes, turning and flattening them once or twice during cooking. Once done, remove and repeat with the remaining apple.

Meanwhile, make your blue cheese topping. Combine the stilton (50 g) and cream cheese (50 g).

When everything’s cooked, top your apple slices with a small amount of the blue cheese mixture and finish with a little crumble of walnuts (2 tbsp).

Pre-heat your air fryer to 200°C if required.

Grab three bowls. Crack and whisk the eggs (2) into one, mix the flour (50 g) and Italian seasoning (1/2 tsp) together in the second, add the panko breadcrumbs (150 g) to the third.

Stuff a bit of stilton (40 g) into each olive (2 packs). Coat them in flour, then the egg mixture, then the breadcrumbs. Once coated, add the olives onto a plate in a single layer.

Once they’re all done, spray them with olive oil spray.

Place them into the air fryer basket. Arrange in a single layer with a little space between each olive.

Air fry for five minutes. Turn them over and spray again with olive oil spray. Air fry for another three minutes. Place on a plate or in a bowl and enjoy.
