Heat the vegetable oil (1 tbsp) in a large saucepan over a medium-high heat. Add the white onions (2), season generously with salt and fry for 5 minutes, until golden. Add the red chillies (15 g), root ginger (15 g) and M&S Remarksable Value garlic (15 g) and fry for a couple of minutes.

Add the garam masala (2 tbsp), stir well and cook for 30 seconds, then add the M&S Remarksable Value round tomatoes (4), stir and cook for 2 minutes.

Add the M&S new potatoes (500 g) and 300ml of just-boiled water to the pan, bring to the boil, cover with a lid and cook over a fairly high heat for 10 minutes, stirring now and again.

Add the florets of cauliflower (1) and cook for a further 10 minutes, or until the potatoes and cauliflower are tender.

Stir in the coriander (25 g) and M&S Remarksable Value lemon (1/2). Check the seasoning – you may want to add more salt or a touch of garam masala.

Serve with your favourite Indian sides and a dollop of mango chutney (as needed) for dipping.
