Preheat the oven to 200°C/180°C fan/gas mark 6.

Spoon the jar of sundried tomato paste (180 g) into a roasting tray, then empty the vegetable mix (1.1 kg) on top. Add the garlic (2 cloves) and scatter over the zest from the lemon (1).

Remove the chicken (1) from its packaging and lay on top of the vegetables in the roasting tray. Pour in the wine (200 ml) or water into the base - this will stop the paste from catching and will result in a delicious sauce.

Cook the chicken according to the time on the original packaging, until the juices run clear when cut.

Remove from the oven and allow the chicken to rest for 15 minutes before carving. Toss the roasted veg in all the roasting juices left in the pan and drizzle over the lemon juice.
