Put the salad potato (1 kg) in a pan of cold water and set over a high heat. Bring to the boil and cook for 10-12 minutes, until fork tender. Drain well and lay onto a baking sheet (you may need two). Use the bottom of a mug or glass to gently flatten each potato.

Drizzle 2 tbsp of the olive oil (2 tbsp) all over the potatoes and season well with salt. Add to the basket of your air fryer and heat to 180°C. Cook for 15-20 minutes, turning halfway.

Meanwhile, combine the jalapeño (1), garlic (2 cloves), coriander (25 g) and lime (1) zest and juice in a mini food processor and blitz to form a paste. Stir in half the crème fraîche (300 ml) and blitz again along with a pinch of salt and the remaining olive oil (1 tbsp). Transfer to a bowl and stir in the rest of the crème fraîche.
