To make the slaw, thinly slice the red cabbage (1/2), carrot (1), red pepper (1) and spring onions (3). Place in a large bowl and sprinkle over ½ tsp salt, then grate over the zest of the lime (1) and orange (1) before squeezing over the juice of both. Drizzle over the olive oil (2 tbsp) and scrunch everything together with your hands. Set aside.

To make the flatbreads, add the flour (250 g), baking powder (1 tsp), yogurt (250 g) and olive oil (2 tbsp) to a bowl and mix together. Dust your work surface with flour and briefly knead the dough to help it come together in a ball. Divide in half, then divide each half in half again. On a large sheet of greaseproof paper and with floured hands, squish the dough with your palms to form 20cm rounds.

Place a griddle pan on a high heat. Cook each flatbread for 2-3 minutes on each side, or until puffed up. Keep the cooked flatbreads warm in a clean tea towel.

Spread the flatbreads with the tzatziki (1 tub), pile the slaw on top and top with the falafels (2 packs).
