Preheat the oven to 180°C/160°C fan/gas mark 4 and line a 20x20cm baking tray with baking paper.

Beat the eggs (8) in a bowl and then add the milk (3 tbsp), tomatoes (8) and parsley (1 tbsp). Season with salt and pepper. Pour the egg mix into the baking tray and cook for 10-15 minutes, until set.

Meanwhile, in a bowl break up the chicken dogs (3) and form into 4 round patties. Add ½ tbsp olive oil to a frying pan and fry the chicken patties until cooked through.

Halve and toast the muffins (4). Cut the omelette into rounds and add to the base of each muffin, followed by the chicken patties and mozzarella slices (4).

Top with the remaining muffin halves and serve with your favourite dipping sauce.
