step 1
Squeeze out as much liquid as possible from the spinach (250 g) and roughly chop. Use the butter (1 tbsp) to grease an oven proof dish, approx 25x15cm.

Layer up the spinach with the bread (1/2 loaf) and ¾ of the cheese (150 g). In a jug, combine the eggs (6) and milk (250 ml). Season well then pour all over the bread. Cover and set aside in the fridge for at least 1 hour before baking. Or, you can prep this the night before baking.

Remove the strata from the fridge 15 mins before preheating the oven to 200°C/180°C fan/gas mark 6. Scatter over the remaining cheese (¼) and bake for 30 minutes until puffed up and golden. Serve scattered with the parsley (as needed).
