step 1
Cut the potatoes (1 kg) into wedges, leaving the skins on. Boil in salted water for around 10-15 minutes, until just tender. Drain then allow to steam dry and cool completely.

Preheat the oven to 200°C fan. Place a baking tray with 2 tbsp oil in the oven to heat up for 5 minutes. Tumble the wedges onto the tray, sprinkle with salt and roast for 30 minutes, turn then roast for a further 10 minutes or until completely golden brown.

Toss the potatoes in the vinegar (3 tsp) and the smoked sea salt flakes (1 tsp), tasting to check whether you need more of either. Serve with the mayo (as needed) on the side.
