Remove the skin of the shallots (3) and cut in half lengthwise, before thinly slicing crosswise.

Fill a large pot with water and place on the hob over high heat. Bring to the boil. Add the rigatoni (150 g) and cook for 12-14 minutes, until al dente, stirring occasionally.

Whilst the pasta is cooking, place a large frying pan on medium heat and add the extra virgin olive oil (1 tbsp) to the pan with the chopped shallot. Stir for 4-5 minutes to soften the shallots before adding in the tomato puree (5 tbsp), chopped garlic (1/2 tsp) and chilli flakes (1 pinch). Combine everything together.

Stir in the coconut cream (1 tin) and then add a sprinkle of salt, a grind of black pepper, the bay leaves (2) and the capers (2 tsp). Mix everything together before adding the vodka (2 tbsp) and roughly 4 tbsp of pasta cooking water. Stir to create a smooth, glossy sauce.

Once the pasta is cooked, drain and add to the sauce, making sure that all the pasta is evenly coated.

Finally, plate up the vodka pasta and serve with a sprinkling of Parmigiano Reggiano (to taste) and a handful of fresh basil (as needed). Enjoy.
