Preheat the oven to 180°C.

Roll out the pastry (2 packs) and cut each piece into a triangle, reserving the off cuts.

Place one of the triangles onto a large, lined baking tray and add most of the mincemeat (5 tbsp) and orange zest (1). Spread to coat the pastry.

Create two tree trunks using the off cuts and add one to the top the mincemeat-topped pastry, followed by the remaining mincemeat, orange zest and the second tree trunk piece.

Carefully place the other triangle on top of the mincemeat-topped triangle. Create branches down both sides of the outer edges and twist.

If you like, create a star to top the tree and wash the whole pastry tree with egg (1).

Bake for 20 minutes, until golden, dust with icing sugar (as needed) and serve with the brandy cream (as needed).
