Add the goat's cheese (125 g), Greek yogurt (2 tbsp) and the rosemary salt (1/2 tsp) to a mixing bowl and whisk until smooth. You can make it the night before and store it in the fridge until ready to serve, if you like.

Spread a spoonful of the whipped goat’s cheese onto each chicory leaf (250 g). Top with the sliced figs (140 g), drizzle over the walnut honey (to taste), then serve with the thyme leaves (2 stalks) scattered on top.
