Preheat the oven to 200°C fan. Put a large roasting tin into the oven to heat through.

Peel the potatoes (1 kg) and cut them into quarters. Add to a large saucepan and cover with water. Add a big pinch of salt and bring to a boil.

Once the potatoes are boiling, cook uncovered for 2 minutes and then drain into a colander. Add back to the large pan and shake gently to fluff up the sides.

Meanwhile, add the beef dripping (100 g) to the roasting din to heat through.

Sprinkle the flour (2 tsp) over the potatoes, and shake gently, so they are evenly coated.

Add the potatoes to the hot wagyu beef dripping, and carefully roll to coat.

Make sure they aren’t touching each other and are in a single layer. Roast for 12 minutes, and then turn them over. Repeat this step, and then return them for a final 10-15 minutes, or until they are crisp. Season to taste with sea salt flakes (as needed).
