Preheat the oven to 200°C /180°C fan/gas mark 4.

Remove the tops from the carrots (550 g) and slice lengthways down the middle. Arrange on a baking sheet, spoon over 2 tbsp water, season with salt and pepper and dot with the butter (1/4 cup). Roast for 35-40 minutes, until the carrots are completely tender.

Meanwhile, to make the whipped feta, blitz the feta (1 pack) with the zest of the lemon (1) (reserve some to serve) and a squeeze of lemon juice until light and super-creamy.

Arrange the carrots on a platter, dotting the feta in and around. Finish with extra lemon zest and ancho chilli flakes (1 tsp).
