Preheat the oven to 200°C/180°C fan/gas mark 4.

Boil the cauliflower (650 g) in a large pan of salted water for 5 minutes, until just tender. Drain, reserving 3 tbsp of the cooking water, and place in a large (20 x 30cm) ovenproof dish. Spoon over the slow-roasted tomatoes (1 pack), reserving the oil.

Meanwhile, in a bowl, stir together the cheese sauce (2 packs), mustard powder (1 tsp) and truffle cheddar (100 g) along with the reserved cooking water to loosen the sauce a little. Pour the sauce over the cauliflower. Top with the breadcrumbs (1 tbsp) and a drizzle of the oil from the tomatoes.

Bake for 30 minutes, until golden and bubbling. Serve with a lemony rocket (as needed) salad, or as an indulgent side with Sunday lunch.
