Whip the cream (300 ml) and vanilla (1 tsp) until soft peaks form.

Add a spoonful of cream to the bottom of a large cake platter or serving plate. Place three of the chocolate chocolate meringues (3) and two raspberry meringues (2) on the plate in a rough circle shape.

Stack with another layer of two chocolate meringues (5) and one raspberry meringues (2), then another layer of two chocolate meringues and the final raspberry meringue, using the cream as you go to help them stick together. Don’t worry about it looking too perfect – just aim to create some height.

Scoop 8 scoops of the ice-cream (300 g) into balls and tuck into the spaces around the meringues. Scatter and tuck the blueberries (50 g), blackberries (50 g) and cherries (50 g) into any remaining spaces.

Finish by drizzling generously in the cracked shell chocolate sauce (3 tbsp) (if the sauce is too thick, place the bottle in a cup of just-boiled water for a minute or two to soften up) and serve straight away.
