step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a muffin tray with four silicone cupcake cases.
step 2
To make the frittata egg bites, beat the eggs (2) and combine with the spring onions (3), pepper (1), cheese (25 g) and a pinch of salt and pepper.
step 3
Decant into cupcake cases and bake for 10-15 minutes, until risen and cooked through.
step 4
Meanwhile, to make the pinwheels, spread each tortilla (2) with 1 tbsp pesto (2 tbsp). Place two slices of ham (4 slices) and two slices gouda (4 slices) on top of each. Tightly roll to form a sausage shape, using a blob of extra pesto to help them hold together, then cut into 3cm-thick slices and stand on one end.
step 5
To make the dip, blitz the butter beans (1 tin), tahini (2 tsp) and lemon juice (1/2) together.
step 6
Serve the egg muffins, pinwheels, dip, peppers (4) and cucumber (4) together.
step 6 Serve the egg muffins, pinwheels, dip, peppers (4) and cucumber (4) together.
