Heat a large frying pan or wok over a high heat with 1 tbsp vegetable oil. Once hot, add the onion (1) and stir-fry for 2 minutes, until golden and beginning to soften. Add the garlic (3 cloves), Tenderstem broccoli (200 g) and red pepper (1) and cook for 2 minutes.

Add the pad Thai sauce (3 tbsp) and soy sauce (1 tbsp) and cook for 2 minutes. Tip in the rice (1 pack) and stir together. Cook until the veggies are nice and soft, and the rice is piping hot.

Meanwhile, heat another large frying pan over a medium-high heat with 1 tbsp vegetable oil. Add the sesame seeds (3 tbsp) to the centre of the pan and crack the eggs (2) on top. Cook for 3-5 minutes, until the whites are cooked through. Season with a pinch of sea salt.

Serve the rice in bowls, topped with the fried eggs and the sliced cucumber (1/2) on the side. Sprinkle over the chilli (1) to garnish and serve with some lime wedges (1).
