unsalted butter
150 mL
white wine
to taste
smoked paprika
to dust

flat leaf parsley , chopped

Method

Step 1
Place a frying pan on a high heat. Drizzle half of the olive oil (15 mL) over the Collection crafted sourdough bread (4 slices) then cook until lightly charred on each side. Remove from the pan and set aside.
Step 2
In a small bowl, mix the M&S Honduran peeled large king prawns (330 g) with the remaining olive oil (15 mL) , garlic powder (6 g) , dried oregano (4 g) , dried basil (1 g) and lots of freshly ground black pepper.
Step 3
Using the same pan, reduce the heat to medium and add the unsalted butter (100 g) to melt. Add the prawns, cooking until they start to turn pink. Pour in the white wine (150 mL) and bring to the boil. Simmer for 1-2 minutes to cook off the alcohol and reduce the sauce by half.
Step 4
Spoon the prawns (along with their cooking liquor) over the slices of chargrilled sourdough. Dust with smoked paprika (to taste) and scatter over some flat leaf parsley (as needed) to garnish.
