Step 1
In a small saucepan, combine half of the blackberries (1 punnet) with 1 tbsp icing sugar (7 g) and a squeeze of lemon juice (1) . Simmer over a medium heat until the fruits break down and the mixture thickens. Allow to cool.
Step 2
Whisk the cream (450 mL) with the lemon zest until it just holds its shape. Roughly crush 3/4 of the mini meringues (2 packs) , then fold these through the cream along with the fresh blackberries (1 punnet) , saving a few to decorate the top.
Step 3
Layer the fruity cream and meringue mix into glasses or bowls with the blackberry coulis. Finish with the remaining meringues, blackberries and a little extra lemon zest.
