step 1
Preheat the oven to 180°C/160°C fan/gas mark 4. Tear the pittas (4) and halloumi (500 g) into 4cm pieces and arrange on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes, tossing halfway, until the pitta is crisp and the halloumi is golden.

Meanwhile, whisk the lime juice (1), olive oil (2 tbsp), honey (1 tsp) and jalapeño (1) in a large bowl. Cut the grapefruit (1) into segments, removing the peel, and toss in the bowl with the easy peelers (4) and dressing. Add the hot halloumi and pitta, tossing with tongs or your hands.

Tumble everything onto a platter then arrange the avocado slices (2) on top. Drizzle with any remaining dressing from the bowl and finish with a sprinkle of the coconut and lime seasoning (1 tsp).
