What is white wine and how is it made?

White wine is crafted by gently pressing white grape varieties to extract the juice. The bitter seeds and stems are avoided. Yeast is often added to help the juice ferment, and it's added to stainless steel vessels to ferment. For a subtle oak-vanilla twist, some wines are aged in oak barrels, with the level of oak influencing the style. A second fermentation softens the acidity, adding a creamy, yoghurt-like flavour.

Our in-house wine experts, Sue Daniels and Belinda Kleinig, handcraft all of our wines with our winemakers, blending carefully selected grapes to achieve the perfect balance of sweetness and alcohol. They visit the vineyards early to have the best pick of the wines, then use up to five to 20 samples to add their interpretation to the wine.
